Caprese Skewers

Mozzarella stuffed rolls and bursting cherry tomatoes make this the best Caprese you’ve ever tasted!
Ingredients
12 Rhodes White Dinner Rolls, dough thawed to room temperature
8 oz low moisture mozzarella cheese, cut into 1/2 inch cubes
cherry tomatoes
fresh basil leaves
balsamic reduction (you can find this in the pasta aisle)
Instructions
- Soak wooden skewers in water for 5-10 minutes to prevent burning on grill.
- Cut each roll in half. Wrap each roll half around each cube of cheese. Make sure the dough is sealed over the cheese.
- Alternate the items on the skewer: cheese stuffed roll, two grape tomatoes, then a leaf of basil, repeat.
- Grill on direct medium heat, closing the grill lid so the dough will cook through. Once the rolls are browned, remove the skewers from the grill.
- Drizzle with balsamic reduction to serve.

How do I do this under the broiler? I don’t have a grill.

Thank you for your question! I haven’t tried this under the broiler but I think the biggest thing would be to watch it carefully. I would make sure the dough is browning and cooking thoroughly and turning to brown evenly. I hope this helps youu!

I would bake it in the oven at 350-375 keeping an eye in it closely until the rolls are done. Broiling will leave the dough unbaked

Another good idea! It’s not a lot of dough so broiling should work as well. As long as you are turning them and watching them closely.
