Pepperoni Rolls

A delicious and distinct dinner roll bundle, for an on the go meal that is found all over West Virginia and Southwestern PA.

Ingredients

16 Rhodes Yeast Dinner Rolls, dough thawed to room temperature
1 package of 2 pepperoni sticks
1 cup shredded mozzarella cheese
3 tablespoons olive oil

Instructions

Combine 2 rolls. Press into a 5 inch circle.

Quarter the pepperoni sticks lengthwise. Then cut the pieces in half to give you 16 equal pieces. Brush sticks with olive oil. Place two sticks in the center of the dough. Place two tablespoons cheese on top of the pepperoni.

Fold the dough over the pepperoni sticks lengthwise, then fold the ends in and pinch to seal. Place seam side down on a sprayed baking pan. Cover with sprayed plastic wrap and let rise for 30 minutes.

Remove wrap and brush with remaining olive oil. Bake at 350ºF for 15-20 minutes until golden brown.

    I’m trying these tomorrow, only putting a homemade meatball and chunks mozzarella inside. I’ll serve with marinara sauce on the side, following your recipe for prepping and baking. wish me luck!

    I made these rolls but used pepperoni slIces instead of pepperoni dtivks. I brushed the tops with egg. They were DELICIOUS!

      Although the pepperoni slices are delicious, thr pepperoni sticks give you way more flavor and texture. I’m a wv gal and have been making these since i was a toddler. I now live in the south where my husband was born so i had to make some adjustments to my pepperoni roll. Making. I started with rhodes bread dough so i would not have to fight the humidity and so i would have an even double rise to my dough. i also found (at walmart online) bridgford bertolino pepperoni stick which is as close in pepperoni taste as i could find to the pepperoni we use in wv. The best pepperoni rolls are those hom from sc but if you cannot do that the rhodes rolls are the next best thing.

        You should be fine using our dough with a pepperoni stick. You don’t need to let the dough rise twice. Thaw your dough and assemble your pepperoni roll and then let them rise. Humidity shouldn’t be a problem in raising the dough. In fact the dough needs some humidity.     This is similar to a recipe i found on your site about 10 years ago. I have been looking for it but can’t find it. I forget the name of it but I remember it had pepperoni slices, and string cheese logs that were cut up into About 2” pieces. I think you put a few thawed rolls together and rolled it out into a circle then cut wedges. You placed pepperOni slices, 2 I think, a piece of string cheese on a wEdge and then rolled them Up. I think they were brushed With a yummy garliCky oil or butter before baking. I think they Were called something like pepperoni or pizza rOllups. Do you still have that recipe available somewhere? KiCking myself that i didn’t save it!

      Oh, found them on another site. They Are called “pizza roll ups” by Rhodes Bake-N-serve! You guys should have them on your own site, too! They are delicious!

    I’m making these now. I brushed the tops with olive oil and sprinkle with Parm and Everything Bagel. Keep you fingers crossed. I am concerned about rising length time. I added string cheese to the pepperoni. I hope it softens or melts. I love this roll dough. I cut one “lump” in half to make finger sandwiches. One lump is great for a small hamburger bun. My friends and neighbors are hooked on your product.

      Yes, you can. If you have the Dinner Rolls you can use 12 rolls to make a loaf of bread. Let the rolls thaw and shape into a loaf. Let it rise and bake it at 350 for 20-25 minutes.

      Thaw the Bread on your counter until it is completely thawed through. On loaf of Bread Dough is equal to 12 Dinner size Rolls. Then you are able to follow the recipe.

    I make pepperoni rolls and only with RHODES dough! I also add sliced peperoncini that I drain and DRy with paper towel to the pepperoni and mozzarella. Always a hit!!

    THE LAST FEW TIMES MY ROLLS DID NOT RISE ONE BIT! I COVERED THEM, MY KITCHEN WAS WARM, I EVEN PUT THEM IN A WARM OVEN, AND STILL WOULD NOT RISE. WHAT AM I DOING WRONG?????

    I brush the middle of my dough with olive oil then lay a layer of mozzerella, a layer of Perpperoni slices and a layer of Provilone. Then sprinkle with garlic powder and Italian seasoning. Rolled up and brushed with an egg wash that I added garlic powder and italian seaning. Baked at 375 for 25 minutes. I think adding the olive oil in the inside really gives it a better flavor.

    II’ve been using rhodes thaw and rise dinner rolls for many many Years for pepperoni rolls. The last four bags i have purchased did Not rise. THEY were not expired. Did you change the recipe?

      The farther you are from that “best by” date on the package, the fresher the yeast is and the faster it will rise. So it may that longer to rise the closer to that date. But other things can affect the performance of the dough. If there is ice in the package or the rolls are stuck together that shows the dough has been allowed to thaw and has been refrozen, which damages the yeast and it will not rise. The store may not be handling the product appropriately. If you will send me your name and address and the dates and codes from each package, I would be happy to send you some replacement coupons. We have not changed anything in the recipe.

        Thank you for your reply. I have a Friend that Had the same issue so i thought maybe you CHANGED the recipe. I appreciate the offer to replace them but Unfortunately i already thREw out the packages. The store must Not have handleD the packages coRrectly because i put them in the freezer as soon aS i get home. i will get them from another store the next time i buy them. Hopefully That will take care of the problem.
