Quiche Pizza (Quichzza)

This mini quiche pizza is so easy and is absolutely perfect for a brunch for two.
Ingredient
4 Rhodes Dinner Rolls, dough thawed to room temperature
4 eggs
1/4 cup sharp cheddar grated
1/2 cup red bell pepper, finely chopped
2 Tablespoons chives
½ cup bacon or real bacon bits
pinch salt & pepper

- Preheat oven to 400ºF. Grease an 8-inch skillet generously with olive oil so your dough doesn’t stick.
- Press rolls together and roll into a 11 inch circle.
- Press dough into the skillet and up onto sides.
- In a bowl, whisk together eggs, cheese, bell peppers, bacon, chives, salt and pepper.
- Pour egg mixture into skillet with the un-baked dough.
- Bake for 20-25 minutes, until eggs are set. Check after 10 minutes to see if pizza crust is browning too quickly. If it is, cover the crust edges with foil and then continue baking until eggs are set.
- Optional toppings: tomato, basil and avocado slices. Slice & serve.
