Chicken Gyro Wrap

Fresh warm flat bread made with Rhodes rolls makes this Greek inspired recipe perfect for dinner.
Ingredients
12 Rhodes Dinner Rolls, thawed
4 Boneless Skinless Chicken Breasts
Chopped Tomato
Chopped Red Onion
Chopped Cucumber
Tzatziki Sauce
Feta Cheese (optional)
Marinade:
2 tablespoons white wine vinegar
2 tablespoons extra virgin olive oil
3 tablespoons Greek yogurt
Juice of one lemon
1 teaspoon minced garlic
2 tablespoons oregano
2 tablespoons parsley
Salt and pepper to taste
Marinade:
Mix all ingredients in a medium bowl. Then add Chicken breasts to the marinade and stir to coat. Cover and refrigerate for 1-24 hours.
Chicken:
Cook chicken on a grill or griddle until the internal temperature reaches 165ºF. Allow chicken rest for 10 minutes then slice into strips.
Flatbread:
Place two Rhodes Dinner Rolls together and roll them into an 8-inch circle. Let dough rest for 10 minutes. Cook each side of the flatbread on medium-low heat for approx. 2 minutes each side. A grill, griddle or fry pan will work.
Gyros:
On top of the flatbread, spread the desired amount of tzatziki sauce and then add grilled chicken slices. Top with diced tomatoes, red onion and chopped cucumber. Garnish with feta cheese (optional). Roll and serve the wrap immediately.

Could you use your rolls to make bacon buns. I going to try it!

I haven’t tried that but I’m sure you could. Ingredients do not combine with the dough very well because it past that stage in the process. It is ready to bake. Rolling it out and adding the bacon would probably work best.

I spray muffin tins with oil / or butter but them in there to rise for 3/5 hours
1lb bacon
1lb of ham
1 large onion
All spice seasoning
I freeze bacon and ham and pull it out like 30 mins before because it’s easier to dice up.
( like mine cooked a little well done so once it’s diced I throw it in a pan and cook the meat) auntie lo doesn’t do that.
Then I flatten the roll ( just with the palm of my hand ) and add the filling and then I put it back into the muffin tin.
Right before I throw in the oven I make a scrambled egg wash and put it on the rolls pop in the oven at 350 for 20 mins (remove from tins and let them cool )
Also I forgot to tell ya to cover the frozen rolls with plastic wrap while they rise
